We design Chania slowly: an early walk through Venetian lanes before the city fully wakes, a private historian revealing stories hidden behind familiar façades, lunch somewhere chosen because the owner still knows where the fish came from that morning, and a late return to your own pool before the rooftop calls again. On another day, a dedicated driver opens western Crete towards the White Mountains, family wineries, Falassarna, Balos, Elafonissi and the quieter villages between them.

DESIGNER’S INSIGHT: Scale changes what we can design. One morning the whole group leaves with private vehicles for the high roads of the White Mountains — dust, altitude, village lunch, nobody watching the clock. The next day splits naturally: some head by private boat towards Balos and Gramvousa, others remain in Chania with a historian, and everyone meets again above the sea as the five balconies catch the same evening light. The luxury here is not filling every hour. It is having enough space, drivers, guides and quiet coordination that everyone can follow a different rhythm and still feel part of one journey.

DESIGNER’S INSIGHT: There is a beautiful point on the road south-west when Chania disappears behind you and Crete begins to feel wilder. With your driver, follow it through Topolia and the mountain villages until Elafonisi appears at the island’s edge. Stay after the rhythm slows, let the beach empty around you, then return to Chania after sunset — rooftop water, steam and silence waiting above the city.

DESIGNER’S INSIGHT: One afternoon, don’t drive anywhere. Leave Chania from the water instead. A privately crewed catamaran takes the coastline apart differently — Gramvousa, Balos, open sea, silence between anchorages — and by the time you return, the suite’s west-facing balcony is waiting for the second sunset of the day.

DESIGNER’S INSIGHT: Let the first morning belong to Chania itself — a private historian through the quieter lanes while shutters are still opening and the Venetian harbour has not yet filled. Poème moves across two levels from Mediterranean breakfasts and slow lunches to cocktails, seasonal dining and DJ-led evenings, with the sea always close and the Old Town just along the promenade. We particularly like its café-trottoir tables earlier in the day — an easy place to sit outside, order without hurry and watch the city begin to move around you.

CÉLESTE

Six floors above Chania, Céleste is the rooftop we would keep an afternoon deliberately free for. The infinity pool meets the Mediterranean horizon while low dining brings a cosmopolitan fusion menu, drinks and music into the same sunlit rhythm. Stay through golden hour: as the light falls across the sea and Old Town, this lively rooftop becomes something quieter and far more intimate.

FAUCHON PARIS

Paris arrives in Chania in a surprisingly natural way. Greece’s first FAUCHON Café Pâtisserie sits within the Hilton, opening towards the street, garden and hotel lobby with café-trottoir seating. Macarons, éclairs, mille-feuille, tarts and the French five o’clock tea make this our little detour on the way to or from the Old Town — polished, playful and wonderfully easy to slip into the day.

LITTLE GALAXY

Just beyond Céleste, the rooftop changes character completely. Little Galaxy is an open-air botanical garden and cocktail bar planted with Mediterranean herbs — mint, basil, rosemary, thyme, oregano, sage and lavender — that travel from garden to glass and plate. We would come as the heat leaves the city, find a quiet corner above the Old Town and let sunset turn into drinks beneath the night sky.

Some evenings call for somewhere smaller. Hidden on the mezzanine, The C Bar looks across the lobby and towards the Mediterranean, with a collection centred on Cognac, Armagnac, single malts, whiskies and Champagne. We see it as the after-dinner address: a good pour, a long conversation and none of the urgency of heading anywhere else.

There is something we particularly like about disappearing into a Provençal wellness ritual while one of Crete’s most atmospheric old towns carries on just beyond the door. Spa L’Occitane en Provence brings its sensorial wellness world to Chania through treatments shaped around longevity, regeneration, balance and vitality, alongside a daylight heated indoor pool, sauna, steam bath, treatment rooms and beauty salon. We would reserve the slower hours here deliberately — after a day exploring western Crete, or before the Old Town draws us back outside for the evening.

FITNESS & MOVEMENT

TRAIN INSIDE. RESET ABOVE CHANIA.

The fully equipped fitness centre keeps the practical side of a training routine intact; what gives movement here its sense of place is upstairs. The rooftop botanical garden opens towards Chania Bay and is used for yoga sessions — a rare setting where a morning practice begins among Mediterranean planting with the city and sea below. For us, that contrast is the point: train properly when you want to, then take the quieter ritual outside and let Chania become part of it.

We like the idea of inclusive living differently in a city like Chania. The freedom is the point: linger over lunch, disappear into the Old Town, return for sunset drinks — and let us design everything beyond the hotel around that rhythm.

Chania changes beautifully with the season, and this is one of the few stays we would design around all four. Winter gives the Venetian harbour back to the city, spring pulls us into the countryside, autumn slows lunches and softens the western coast, while summer belongs equally to the sea and the streets after dark. We design each return differently — because the most interesting version of Crete is not always the one found in August.

Complimentary concierge and valet parking handle life at the hotel; we take care of the journey around it. A private airport transfer already waiting, a driver timed for an early departure west, the right table held for dinner, tomorrow’s boat confirmed before tonight’s cocktails. The details disappear quietly, leaving Chania to feel spontaneous even when everything behind it has been carefully designed.

Connecting rooms and two-bedroom family accommodation give everyone room to live properly, while cribs, childcare and kids’ menus take care of the practical details. A conference hall for up to 200 people, multiple meeting rooms with total capacity reaching 350 and an elegant pre-function area with its own library give the Hilton a serious events dimension. We see more than corporate infrastructure here. It creates a compelling Chania base for intimate celebrations, destination gatherings and incentive travel — particularly when we can carry the occasion beyond the hotel into private dinners, sailing days and the wider landscape of western Crete.

A wedding here can begin as everyone arrives into Chania, continue through a private dinner above the Mediterranean and unfold across several days rather than a single reception. The hotel’s event spaces provide the structure; Chania provides the atmosphere. We shape the wider celebration around it — welcome drinks, private dining, boat days, village discoveries and the small transitions that turn a destination wedding in Crete into a shared memory rather than simply an event.

An exclusive luxury retail arcade adds another urban layer to the resort. We like it less as a conventional hotel facility and more as part of Hilton Chania’s city-hotel character — somewhere to browse between the pool, lunch and an evening in the Old Town. Hilton Chania sits on the Nea Chora waterfront, just 500 metres from the Old Town — close enough for Chania to become part of everyday life, yet perfectly placed for western Crete to begin beyond it.

On Chania’s waterfront, between Nea Chora and the historic centre, the hotel gives us an unusually fluid base: the Old Town and Venetian harbour are reached on foot, the airport is approximately 15 km away, and the roads towards western and inland Crete open naturally from the city. It works equally well for a few immersive days in Chania or as the starting point of a longer luxury journey through Crete.

We would resist trying to “see Chania” in one afternoon. Give the city its own time. Walk into the Old Town early with a private historian, when the lanes are quieter and layers of Venetian, Ottoman and Cretan life can be read in doorways, fortifications, courtyards and the harbour rather than reduced to dates. Later, lose the itinerary completely — a table found for lunch, the waterfront at golden hour, somewhere we already know for dinner.

Then let us widen the map. A private driver can carry the journey into the White Mountains and villages of western Crete, where a specialist guide brings landscape, food and local life into the same story. Westward, Falassarna is the beach we save for the light softening towards sunset; Balos becomes far more evocative approached from the sea on a privately designed boat day; and Elafonisi rewards the longer journey south-west, where the road itself becomes part of the experience.

Other days can follow archaeology, vineyards, olive groves and the people still shaping Cretan food and culture. And when we want to understand the island on a larger historical scale, we travel east with a private driver and specialist guide towards Knossos — giving the Minoan world the time and context it deserves rather than treating one of Crete’s defining archaeological sites as another stop on a checklist.
